  • In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Spray a 1.5 lb bread pan with non-stick cooking spray and pour the batter in, smoothing the top.
  • Place the bread pan in the preheated oven and bake for 40-45 minutes, tenting with foil if needed.
  • Allow the zucchini bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
