  • ½ cup cucumber, chopped English cucumbers for fewer seeds.
  • ¼ cup onion, chopped Red onion for a nice bite, sweet onions work too.
  • 1 jalapeno, chopped Adjust heat according to preference.
  • ¼ cup cilantro, chopped Fresh cilantro enhances the dish's aroma.
  • 1 avocado, diced or mashed (optional) Adds richness, highly recommended!

Preparation Steps

  • Chop 1 lb of fresh shrimp into bite-sized pieces and place in a 9x13 inch pan.
  • Pour 1 cup of lime juice over the shrimp, ensuring they are fully submerged. Cover with plastic wrap and marinate at room temperature for about 1 hour.
  • Transfer to the refrigerator and chill for another 1 to 2 hours until shrimp turn opaque.
  • Chop the tomatoes, cucumber, onion, jalapeno, and cilantro while shrimp is marinating.
  • Once shrimp is ready, gently stir in the prepared vegetables until well mixed.
  • Add diced or mashed avocado on top of ceviche before serving, if desired.
  • Serve with tortilla chips or over tostada shells.

Notes

Best enjoyed fresh, but can be stored in the fridge for up to 2 days. Avoid leaving out at room temperature for more than 2 hours.
