For the Bowl

  • 1 lb peeled and deveined shrimp
  • 2 whole ripe avocados sliced or cubed
  • 2 cups cooked rice or quinoa choose quinoa for a nutty flair or rice for a classic touch

For the Salsa

  • 1 cup diced fresh mango
  • 1 small finely chopped red onion
  • 1 whole seeded and minced jalapeño adjust to your spice preference
  • 1 whole lime juice freshly squeezed

For Cooking Shrimp

  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • salt and pepper to taste

For Garnish

  • 1 handful chopped fresh cilantro for garnish

Step-by-Step Instructions

  • Dicing mango into small cubes, finely chop red onion, and mince jalapeño, then combine with lime juice.
  • Season shrimp with chili powder, salt and pepper to taste.
  • Heat olive oil in a skillet, then cook seasoned shrimp until pink and opaque.
  • In serving bowls, place cooked rice or quinoa as the base, then layer with avocado slices.
  • Top bowls with cooked shrimp and mango salsa.
  • Garnish with chopped cilantro and serve immediately.

Notes

For best results, avoid overcooking shrimp. Add avocado just before serving to prevent browning.
