Ingredients
  

For the Salad

  • 1 head Romaine lettuce chopped
  • 1 cup Cherry tomatoes halved
  • 1 medium Cucumber diced
  • 1 medium Bell pepper any color, diced
  • 1 medium Carrot shredded
  • 4 pieces Radishes thinly sliced
  • ½ medium Red onion thinly sliced
  • 1 medium Avocado diced
  • ¼ cup Sunflower seeds
  • cup Feta cheese optional, crumbled
  • ¼ cup Fresh parsley chopped

For the Dressing

  • ¼ cup Olive oil good-quality
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Honey or maple syrup
  • ½ teaspoon Garlic powder
  • to taste Salt
  • to taste Pepper

Instructions
 

Preparation

  • Prepare the Base: Thoroughly wash the romaine lettuce under cold water to remove any soil, then chop it into bite-sized pieces. Place the chopped lettuce in a large salad bowl.
  • Add the Tomatoes: Wash the cherry tomatoes, cut each in half, and add them to the bowl with the romaine lettuce. Gently stir to combine the tomatoes with the lettuce.
  • Chop and Mix the Veggies: Peel the cucumber and dice it into small cubes. Add it to the salad bowl along with the diced bell pepper, shredded carrot, thinly sliced radishes, and red onion. Gently toss these vegetables together.
  • Fold in the Avocado: Carefully cut the avocado in half, remove the pit, and scoop out the flesh. Dice the avocado and gently fold it into the salad.
  • Sprinkle the Seeds and Cheese: Sprinkle the sunflower seeds and optional feta cheese on top of the salad.
  • Whisk the Dressing: In a separate bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey or maple syrup, garlic powder, and a pinch of salt and pepper until well combined.
  • Dress the Salad: Drizzle the prepared dressing over the salad just before serving, and give it a gentle toss to combine everything.
  • Garnish and Serve: Sprinkle fresh chopped parsley on top for extra freshness and color before serving.

Notes

Add the dressing just before serving to keep the salad fresh and crisp. Adjust the sweetness of the dressing to your taste preference.
