Ingredients
  

For the Marinade

  • ¼ cup lime juice Bright acidity
  • 2 cloves garlic Minced
  • ¼ cup cilantro Chopped

For the Breading

  • 1 cup all-purpose flour For frying
  • 2 large eggs Beaten
  • 1 cup panko breadcrumbs For extra crunch

  • ½ teaspoon garlic powder
  • ½ teaspoon cumin powder
  • 1 teaspoon chili powder
  • 1 teaspoon pepper
  • 1 teaspoon salt (for breadcrumbs)

For the Slaw

  • 2 cups shredded cabbage mix
  • 1 cup shredded carrots
  • ½ cup mayonnaise
  • ¼ cup lime juice (additional for slaw)
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon salt (for slaw)
  • ½ teaspoon pepper (for slaw)

  • In a medium bowl, whisk together lime juice, minced garlic, chopped cilantro, and salt until fully blended.
  • Prepare a dredging station with three bowls: one for flour, one for beaten eggs, and one for seasoned panko breadcrumbs.
  • Coat fish strips in flour, dip in beaten eggs, then coat with panko breadcrumbs, pressing gently.
  • In a large bowl, combine shredded cabbage mix with shredded carrots. In a separate bowl, whisk together mayonnaise, lime juice, apple cider vinegar, salt, and pepper. Pour over cabbage and carrots.
  • Preheat oven to 400°F or heat skillet over medium heat. Bake coated fish for 12-15 minutes or cook in skillet for 3-4 minutes on each side.
  • Serve fish over rice or quinoa, topped with slaw and any desired toppings.

Notes

Marinate fish for at least 30 minutes for best flavor. Panko breadcrumbs recommended for maximum crunch. Serve immediately for optimal texture.
