  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon pepper

  • Begin by heating a large, heavy-bottomed pot over medium-high heat. Add a drizzle of oil. Season the beef with salt and pepper, then add to the pot. Sear the beef for about 3–4 minutes on each side until browned. Remove and set aside.
  • In the same pot, lower the heat to medium and add chopped onions and minced garlic. Sauté for 4–5 minutes until the onions are translucent. Scrape any browned bits from the pot.
  • Add the chopped root vegetables into the pot with the beef. Stir everything together and let the vegetables coat in the juices for about 3 minutes.
  • Pour in the red wine, stirring to deglaze the pot. Allow the wine to simmer for about 2–3 minutes until it reduces slightly. Add in the beef broth and bring to a gentle boil.
  • Once boiling, add fresh thyme and bay leaves, along with additional salt and pepper. Lower the heat to a simmer, cover the pot, and let cook for 1.5 to 2 hours.
  • After cooking, check the tenderness of the beef and vegetables. If tender, stir well, adjust seasoning if necessary, ladle into bowls, garnish with fresh herbs, and serve with crusty bread.
