Cooking Steps

  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.

  • In a separate bowl, whisk together flour, baking powder, garlic powder, and salt.
  • Cut cold butter into the flour mixture until it resembles coarse crumbs.
  • Stir in shredded sharp cheddar cheese, milk, and parsley until just combined.
  • Drop spoonfuls of dumpling dough into the simmering soup, cover, and cook for 10-12 minutes.
  • Remove lid and cook for an additional 2 minutes uncovered.
  • Ladle the soup into bowls and serve hot.
