Instructions

Step-by-Step Instructions

  • Preheat your oven to 175°C (350°F) and prepare your loaf tin by brushing it generously with butter or oil and dusting it with flour.
  • Cream the butter with the soft brown sugar until light and fluffy, about 2 minutes.
  • Add the eggs one at a time, beating well after each addition and scraping down the bowl as needed.
  • In a separate bowl, whisk together the self-raising flour, baking powder, pumpkin spice mix, and salt.
  • Sift in one-third of the flour mixture into the creamed butter and eggs, and fold in gently.
  • Add half the milk and mix well, then repeat the process with the remaining flour and milk.
  • Fold in the vanilla extract, then divide the batter. Mix one-third with black cocoa powder.
  • In the remaining batter, mix in the pumpkin powder and orange food coloring.
  • Layer the orange and black batters alternately in the prepared tin.
  • Gently swirl the batters together to create a marbled effect.
  • Bake in the preheated oven for approximately 45 minutes or until a tester comes out clean.
  • Cool in the tin for a few minutes before transferring to a wire rack.
  • To prepare the glaze, mix powdered sugar with warm water until smooth.
  • Once cooled, drizzle the glaze over the cake and decorate with sprinkles and eyeball candy.

Notes

Use room temperature ingredients for better incorporation and avoid over-mixing to keep the cake light and fluffy. Ensure the cake is completely cool before glazing.
