Step-by-Step Instructions

  • In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for 5-7 minutes until softened. Stir in minced garlic and cook for 1 additional minute.
  • Pour in crushed tomatoes and vegetable broth, sprinkle with dried basil, sugar, salt, and black pepper. Stir and bring to a boil, then reduce heat and let simmer for 15-20 minutes.
  • Remove from heat and blend the soup using an immersion blender until smooth. If using a countertop blender, let cool slightly before blending.
  • Return pot to low heat, and stir in heavy cream until combined and heated through. Taste and adjust seasoning if needed.
  • Ladle into bowls, garnish with fresh basil, and serve with crusty bread.

Notes

Use fresh produce and high-quality canned tomatoes for the best flavor. Stir in cream on low heat to avoid curdling.
