  • In a large pot over medium heat, warm olive oil. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic, dried thyme, dried basil, and crushed red pepper flakes; cook for another minute.
  • Pour in whole peeled tomatoes with their juices. Break tomatoes apart with a wooden spoon. Stir in vegetable broth and sugar, mixing thoroughly.
  • Bring to a gentle simmer. Cook uncovered for 20-25 minutes, stirring occasionally. Allow flavors to meld and soup to thicken slightly.
  • Remove from heat. Puree the soup with an immersion blender until smooth and creamy, or transfer in batches to a blender.
  • Stir in heavy cream and season with salt and pepper. Gently reheat on low if necessary.
  • Ladle soup into bowls and garnish with fresh basil leaves before serving.
