Step-by-Step Instructions

  • Heat a large pot over medium-high heat. Add 1 pound of Italian sausage to the pot, using a wooden spoon to break it into smaller pieces as it cooks. Sauté until nicely browned and fully cooked, about 5-7 minutes.
  • Once the sausage is browned, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent and fragrant.
  • Stir in 6 cups of chicken broth, 1 teaspoon each of dried basil and oregano, along with 1 teaspoon of salt and ½ teaspoon of black pepper. Bring to a gentle boil.
  • Reduce the heat to low and let the soup simmer uncovered for 20 minutes.
  • After simmering, add 9 ounces of cheese tortellini to the pot. Cook according to package instructions, usually 3-5 minutes.
  • Gently fold in 3 cups of fresh spinach and cook for about 1-2 minutes until leaves have wilted.
  • Pour in ½ cup of heavy cream and stir to combine. Simmer for an additional 5 minutes.
  • Taste and adjust the seasoning with more salt or pepper if needed.
  • Ladle the soup into bowls and serve warm.
