Equipment

  • large skillet
  • 9x13 baking dish
  • cooking spray

Ingredients

For the Meat Mixture

  • 1 lb ground beef adds a hearty flavor; try swapping with ground turkey for a lighter option
  • 1 medium onion enhances the savory profile; sauté until soft for the best bite
  • 1 can cream of mushroom soup acts as a creamy binder; substitute with homemade soup for freshness
  • 1 teaspoon garlic powder brings out deeper flavors; feel free to use fresh garlic for more intensity

For the Vegetables

  • 2 cups frozen mixed vegetables a convenient way to include nutritious veggies; no need to thaw beforehand
  • 1 cup sour cream optional; adds creaminess and tang; omit if you prefer a lighter dish

For the Topping

  • 32 oz frozen tater tots create that delightful crispy layer everyone loves; choose seasoned tots for an extra kick
  • 2 cups shredded cheese adds melty goodness; use cheddar or your favorite blend for a unique flavor
  • 1 cup extra cheese for topping; sprinkle on before baking for a bubbly, cheesy finish

Instructions

Step‑by‑Step Instructions

  • In a large skillet over medium heat, add 1 lb of ground beef and cook until browned, about 5-7 minutes. Break it apart with a spatula to ensure even browning. When it's no longer pink, add in the diced onion and sauté for another 3-4 minutes until the onion becomes soft and translucent. Season with salt, pepper, and garlic powder before draining any excess grease.
  • Once drained, stir in 1 can of cream of mushroom soup along with the frozen mixed vegetables. If you're using sour cream, add it now for that creamy texture. Mix well and let the flavors meld together for a couple of minutes over low heat.
  • Let the meat mixture cool for about 10 minutes to prevent your tater tots from becoming soggy.
  • Preheat your oven to 375°F (190°C). Grease a 9x13 baking dish. Spread the cooled meat mixture evenly across the bottom of the dish and sprinkle your choice of shredded cheese over the meat.
  • Take your bag of frozen tater tots and poke holes in them to create steam vents. Arrange the tater tots evenly over the cheesy layer.
  • Slide the casserole into the preheated oven and bake for 30–35 minutes until the tater tots turn golden and crispy.
  • After baking, remove the Tater Tot Casserole from the oven and allow it to cool for about 5 minutes before serving.

Notes

Consider adding herbs for a fresh touch before serving.
