  • 8 slices White bread
  • 1 large Large avocado
  • 4 tablespoon Cowboy butter

  • Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil.
  • Arrange the thick-cut bacon slices on the lined baking sheet in a single layer and bake for 25-30 minutes until crispy.
  • Shape the ground pork sausage into four patties and cook in a medium skillet over medium heat for 3-4 minutes per side, adding cheese in the last minute.
  • Melt unsalted butter in the skillet and scramble the eggs with salt and black pepper until fluffy.
  • Spread cowboy butter on one side of each slice of toasted bread and assemble the base with a sausage patty on a buttered slice.
  • Layer two pieces of crispy bacon, avocado slices, and ½ cup of fluffy scrambled eggs on top of the second slice of bread.
  • Top with another slice of toasted, buttered bread, cut into four triangles, and secure with toothpicks.
