Instructions

Step-by-Step Instructions for Thanksgiving Piecaken

  • Preheat your oven to 350 degrees F (175 degrees C). Prepare a 9-inch springform pan by spraying it with non-stick spray and lining the bottom with parchment paper.
  • In a mixing bowl, beat the cream cheese on high for 5-6 minutes until smooth. Gradually add the granulated sugar and flour, mixing until combined. Stir in the vanilla and cinnamon, then pour in the heavy whipping cream. Incorporate the eggs one at a time, then pour the batter into the springform pan. Bake at 350 degrees F for 10 minutes; reduce to 200 degrees F, and bake for 30-35 minutes until slightly jiggly. Let it cool in the oven for 15 minutes, then refrigerate overnight.
  • Preheat your oven to 350 degrees F again, preparing a 9-inch cake pan with a coat of vegetable shortening and flour. Whisk together the flour, baking powder, cinnamon, ginger, nutmeg, cloves, and allspice. Cream together softened butter and brown sugar until light and fluffy. Add the vegetable oil, egg, and vanilla, mixing until fully combined. Gradually mix in half of the flour mixture, followed by the milk and remaining flour until just combined. Pour the batter into the prepared pan and bake for 15-17 minutes. Allow the cake to cool before refrigerating overnight.
  • In a mixing bowl, beat the softened unsalted butter on high speed for 1-2 minutes until smooth. Gradually add powdered sugar, mixing on low speed. Once combined, add optional cinnamon, followed by vanilla extract and cold heavy whipping cream. Beat on high speed for another 1-2 minutes until the frosting is fluffy.
  • Once the cheesecake and spice cake layers have cooled and are chilled, level each layer. Invert the cheesecake layer onto a serving platter, gently removing parchment paper. Spread ¾ cup of frosting over the cheesecake evenly. Place the spice cake layer on top, adding another ¾ cup of frosting over that layer. Trim pumpkin pie crust and place it atop the spice cake.
  • Use the remaining frosting to cover the entire assembled Thanksgiving Piecaken. Chill in the refrigerator for 20-30 minutes to allow the frosting to firm up. Smooth on remaining frosting and decorate as desired.
  • Before serving, sprinkle the top lightly with cinnamon. Slice and present your magnificent Thanksgiving Piecaken to your guests.

Notes

Ensure cream cheese and eggs are at room temperature for smoother blending. Chill time is important for better texture. Use a serrated knife for leveling layers for a stunning presentation. Monitor bake times closely to avoid cracking in cheesecake layer.
