  • 1 cup diced tomatoes or tomato sauce balances richness

Step-by-Step Instructions

  • Begin by cutting the chuck or round steak into serving-sized pieces. In a shallow dish, combine flour, salt, and pepper. Dredge each piece of beef in the flour mixture, coating evenly.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the floured beef pieces and brown them on all sides, about 4-5 minutes per side.
  • In the same skillet, lower the heat to medium and add the chopped onions, carrots, and celery. Sauté for about 5-7 minutes until tender.
  • Pour in 1 cup of beef broth and 1 tablespoon of Worcestershire sauce, stirring well to combine. Scrape any browned bits from the bottom of the pan.
  • Return the browned beef to the skillet and add 1 cup of diced tomatoes or tomato sauce. Bring everything to a simmer.
  • Cover the skillet tightly with a lid and reduce the heat to low. Let the Swiss Steak cook for about 1.5 to 2 hours, or until the beef is fork-tender.

Notes

This dish can be prepared ahead of time for enhanced flavor. Leftovers improve overnight.
