For the Mashed Potatoes

Instructions
 

  • Preheat your oven to 325°F (163°C).
  • Generously season the short ribs with salt and pepper on all sides.
  • Heat olive oil in a large pot over medium-high heat and sear the short ribs for 3-4 minutes on each side until a deep crust forms.
  • Sauté chopped onion, carrots, celery, and minced garlic in the same pot for 5-7 minutes until aromatic.
  • Stir in tomato paste, thyme, and rosemary, cooking for an additional minute.
  • Deglaze with red wine, simmering for about 5 minutes and scraping any brown bits from the pot.
  • Add beef broth and return the short ribs to the pot, ensuring they are submerged.
  • Cover with a lid and braise the short ribs in the oven for 2 to 2.5 hours.
  • While the ribs are braising, boil salted water, add potatoes, and cook for about 15 minutes until tender.
  • Drain potatoes, return to pot, add warm milk and butter, and mash until smooth. Season with salt.
  • Plate the ribs over the mashed potatoes and ladle sauce on top before serving.
