Ingredients
  

For the Chicken

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 teaspoon kosher salt adjust to taste
  • 1 teaspoon freshly ground black pepper

For the Marinade

  • 1 teaspoon smoked paprika or sweet paprika for milder flavor
  • 1 teaspoon garlic powder aromatic kick
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil add extra if pan-searing
  • 2-3 tablespoons fresh lime juice about 2–3 limes
  • 1 tablespoon lime zest
  • 3 tablespoons honey
  • 2 tablespoons soy sauce tamari is gluten-free alternative
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 2 cloves garlic freshly minced or grated
  • 1 teaspoon fresh ginger optional
  • 1 teaspoon red pepper flakes or fresh chili adjust to taste
  • 2 tablespoons fresh cilantro stems optional

For Serving

  • 3 cups jasmine rice, basmati rice, or quinoa
  • 2 limes extra limes for wedges
  • 1 cup fresh cilantro leaves
  • 2 stalks green onions
  • 2 tablespoons toasted sesame seeds optional
  • 1 whole sliced avocado optional

Instructions
 

Preparation

  • Pat the chicken dry with paper towels, then season both sides with salt, pepper, smoked paprika, garlic powder, and onion powder.
  • In a medium bowl, whisk together lime juice, lime zest, honey, soy sauce, and rice vinegar until smooth.
  • Add garlic, ginger, red pepper flakes, and cilantro stems to the marinade and mix well.
  • Place the chicken in a bag, pour two-thirds of the marinade over it, seal, and marinate in the refrigerator for at least 30 minutes.
  • Preheat the grill to medium-high or preheat the oven to 400°F.
  • Grill chicken for 5-7 minutes per side or sear in a skillet for 3-4 minutes, adding butter if desired.
  • Pour the reserved marinade into a saucepan, bring to boil, simmer for 3-5 minutes, and serve over the chicken.
  • Garnish with cilantro, green onions, and lime wedges before serving.

Notes

Allow the chicken to marinate for at least 30 minutes for best flavor. Use a meat thermometer to check for doneness.
