Cooking Instructions

  • In a medium saucepan, combine 1 cup of rice with 2 cups of water or chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Brown 1 pound of ground beef or turkey; season with 1 teaspoon salt, 1 teaspoon pepper, and 2 tablespoons of taco seasoning. Cook until meat is no longer pink.
  • Stir in a drained can of black beans and 1 cup of corn into the skillet, cooking for another 2-3 minutes until heated through.
  • To serve, spoon the cooked rice into a bowl, layer the taco mixture on top, followed by 1 cup of diced tomatoes and a handful of shredded lettuce. Sprinkle with shredded cheddar cheese.
  • Drizzle with salsa to taste, garnish with fresh cilantro, and serve with lime wedges.

Notes

Store leftovers in separate airtight containers for freshness. Combine just before serving for best texture.
