For the Filling

  • 1 lb Ground Beef Opt for lean meat to reduce fat.
  • 1 packet Taco Seasoning Store-bought or homemade.
  • 1 can Diced Tomatoes and Green Chiles Use canned for convenience.
  • 1 cup Cheddar Cheese Use freshly shredded for best results.
  • ½ cup Ranch Dressing Homemade can elevate the dish.

For the Shells

  • 12 pieces Phyllo Tart Shells Available in the frozen section.

Step-by-Step Instructions

  • Preheat your oven to 350ºF (175ºC).
  • In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.
  • Return the skillet to low heat and add taco seasoning, diced tomatoes, and green chiles. Stir and let simmer for 5 minutes.
  • In a mixing bowl, combine shredded cheddar cheese with ranch dressing. Fold in the seasoned taco mixture.
  • Spoon the filling into phyllo tart shells. Freeze if preparing ahead.
  • Bake in the preheated oven for 8-10 minutes until golden brown and cheese is bubbly.

Notes

These bites are perfect for potlucks and gatherings, and can be made ahead and frozen for convenience.
