  • In a mixing bowl, whisk together sweet chili sauce, soy sauce, lime juice, and vegetable oil. Add minced garlic and ginger, stirring until combined.
  • Add peeled and deveined shrimp to the marinade, ensuring they're coated. Let sit for about 30 minutes at room temperature.
  • Heat a non-stick skillet over medium-high heat for about 2 minutes. Add marinated shrimp to the skillet in a single layer.
  • Cook the shrimp for 2-3 minutes on one side until pink and opaque, then flip and cook for an additional 2-3 minutes.
  • Once shrimp are cooked, add pineapple chunks and stir to combine. Sauté for an extra 2-3 minutes.
  • Season with salt and pepper to taste, stir for another minute, then remove from heat and serve.

Notes
