Ingredients

For the Sweet Chili Sauce

For the Rice

  • 1.5 cups uncooked jasmine rice Fluffy and fragrant
  • 2.5–3 cups water Adjust according to package directions

  • 1 teaspoon neutral oil or 1 tablespoon butter Optional for flavor

For the Veggies

  • 1 cup shredded carrots Adds crunch

Instructions
 

Preparation

  • Rinse the uncooked jasmine rice under cold water 2–3 times until the water runs mostly clear.
  • In a medium saucepan, combine the rinsed rice, water, and salt. Optionally add neutral oil or butter.
  • Bring to a gentle boil over medium-high heat, reduce to low, cover and simmer for 15 minutes.
  • Turn off heat and let the rice rest, covered, for another 10 minutes.
  • In a medium bowl, season the chicken pieces with salt, pepper, cornstarch, soy sauce, and vegetable oil.
  • Let the chicken marinate for at least 10–15 minutes at room temperature.
  • Wash and prepare the vegetables, shredding carrots and slicing bell pepper, cucumber, and broccoli.
  • In a small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, and honey or brown sugar.

Cooking

  • Heat vegetable oil in a large skillet or wok over medium-high heat and add the marinated chicken.
  • Cook undisturbed for 2–3 minutes, then stir-fry for an additional 3–5 minutes.
  • Push the chicken to the edges of the pan, add garlic and optional ginger to the center, and cook for 30 seconds.
  • Pour the sweet chili sauce over the chicken, toss to coat and simmer for 2–3 minutes until thickened.
  • Divide rice among serving bowls, top with sweet chili chicken, carrots, bell pepper, cucumber, and broccoli.
  • Garnish with green onions, sesame seeds, and optional crushed nuts. Serve with cilantro and lime wedges.

Notes

Marinate chicken for at least 15 minutes for enhanced flavor. Rinse rice thoroughly for fluffiness. Avoid overcrowding in cooking chicken to achieve a golden-brown exterior.
