  • Begin by lightly crushing 1 tablespoon of dried lavender buds using a mortar and pestle for about 5 minutes.
  • In a wide saucepan, mix together 2 cups of blueberries, ¼ cup of honey, 1 tablespoon of lemon zest, and 2 tablespoons of lemon juice. Cook over medium heat for about 10 minutes, stirring occasionally.
  • Once combined, let the mixture simmer gently for an additional 10 minutes, skimming off any foam that may rise to the surface.
  • After simmering, check if your jam reaches about 220°F (105°C) using a thermometer or test by dropping a spoonful onto a chilled plate.
  • Once thickened, remove from heat and fold in the crushed lavender buds, allowing the mixture to cool slightly before transferring it to jars.
  • Ladle the hot jam into sterilized half-pint jars, seal tightly, and process in a boiling water bath for 10 minutes.
