Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, minced garlic, fresh thyme, black pepper, and salt.
  • Place the pork tenderloin in a resealable plastic bag or a shallow dish and pour the marinade over it. Coat evenly, seal or cover, and refrigerate for at least 30 minutes, preferable 2 to 4 hours.
  • Remove the pork from the marinade and reserve it. Pat it dry with paper towels.
  • In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
  • Add the pork tenderloin to the skillet and sear for about 3–4 minutes on each side until golden-brown.
  • Pour the reserved marinade over the seared pork in the skillet.
  • Transfer the skillet to the preheated oven and roast for 15-20 minutes, until the internal temperature reaches 145°F (63°C).
  • Remove the skillet from the oven and let the pork rest for 5-10 minutes.
  • Slice the pork tenderloin into medallions, drizzle with pan juices, and garnish with fresh thyme sprigs if desired.

Notes

For deeper flavor, marinate longer. A hot skillet ensures a good sear. Always let the pork rest after cooking to maintain juiciness.
