Ingredients
  

For the Chicken Mixture

  • 2 cups Shredded cooked chicken leftover rotisserie chicken works perfectly!
  • ½ cup Buffalo sauce adjust to taste for your preferred spice level
  • 4 oz Cream cheese softened
  • ¼ cup Ranch or blue cheese dressing for drizzling
  • 1 cup Celery finely chopped
  • ¼ cup Green onions sliced

For Assembling

  • 1 tablespoon Olive oil for cooking the chicken mixture

  • 1 head Iceberg or romaine lettuce for wraps

  • ½ cup Shredded carrots

Step-by-Step Instructions

  • In a large mixing bowl, combine the shredded cooked chicken with the buffalo sauce. Stir thoroughly until chicken is evenly coated.
  • Add the softened cream cheese to the buffalo chicken mixture and mix well until fully combined to achieve a smooth and creamy texture.
  • Gently fold in the finely chopped celery and sliced green onions into the mixture. Ensure everything is combined evenly.
  • In a small skillet, heat olive oil over medium heat. Add the chicken mixture and cook for about 5–7 minutes until heated through.
  • While the chicken mixture reheats, separate the lettuce leaves and rinse them under cold water. Pat dry with a kitchen towel.
  • Once the chicken mixture is heated, remove from heat and let it cool slightly for 2-3 minutes.
  • To assemble, take a lettuce leaf and place a portion of the chicken filling in the center. Top with optional ingredients.
  • Wrap the lettuce around the filling, and serve immediately with extra ranch or blue cheese dressing on the side.

Notes

Store leftover wraps in an airtight container for up to 3 days. Freeze filling for up to 3 months, thaw before reheating.
