Step‑by‑Step Instructions

  • Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large skillet over medium heat until melted and bubbly. Add the diced onion and sauté for 4-5 minutes until softened.
  • Stir in the minced garlic, cooking for an additional minute until fragrant. Add 1 pound of breakfast sausage, breaking it up into smaller pieces as it cooks.
  • Continue to cook the sausage for 8-10 minutes until browned and fully cooked.
  • Once the sausage is cooked, sprinkle ¼ cup of flour over the mixture and stir to combine. Cook for 1-2 minutes while stirring constantly.
  • Gradually pour in 2 cups of milk while stirring continuously to prevent lumps. Season with salt, black pepper, cayenne pepper, paprika, ground sage, garlic powder, onion powder, and thyme. Bring to a gentle simmer.
  • Allow the gravy to cook for 5-7 minutes while stirring occasionally, until it thickens to your desired consistency.
  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • On a clean surface, place the large flour tortillas. Spoon about 2-3 tablespoons of the prepared sausage gravy onto the center of each tortilla and sprinkle some shredded cheddar and Monterey Jack cheese.
  • Carefully roll up each tortilla tightly to form a closed enchilada, seam-side down in the prepared baking dish.
  • Pour the remaining sausage gravy evenly over the enchiladas and sprinkle the remaining cheeses.
  • Place the baking dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbling.
