Ingredients
  

For the Cookies

  • 1 cup Unsalted butter softened
  • 1 cup Packed light brown sugar
  • ½ cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Pumpkin puree
  • 2 ½ cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground nutmeg
  • ½ teaspoon Ground cloves
  • ¼ teaspoon Salt
  • 3 cups Old-fashioned rolled oats

For the Maple Frosting

  • 4 ounces Cream cheese softened
  • ¼ cup Unsalted butter softened
  • 2 cups Powdered sugar
  • 2 tablespoons Maple syrup
  • 1 teaspoon Vanilla extract

Instructions
 

Baking the Cookies

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing thoroughly after each addition. Stir in vanilla extract and pumpkin puree until combined.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  • Gradually add the dry mixture to the wet mixture and mix until just combined.
  • Fold in the old-fashioned rolled oats until evenly distributed.
  • Using a rounded tablespoon, drop dough onto the prepared baking sheets, spaced about 2 inches apart.
  • Bake for 12 to 15 minutes, until the edges are set and the centers remain slightly soft.
  • Allow cookies to cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

Preparing the Maple Frosting

  • In a medium bowl, beat together softened cream cheese and unsalted butter until smooth and creamy.
  • Gradually add powdered sugar, beating until blended, then stir in maple syrup and vanilla extract.
  • Beat the mixture until smooth and spreadable.
  • Frost the cooled cookies with the maple frosting and enjoy!

Notes

For thicker cookies, consider chilling the dough for 30 minutes before baking.
