  • Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan with cooking spray or butter.
  • In a large mixing bowl, use an electric mixer to beat together softened unsalted butter, granulated sugar, and packed brown sugar until light and fluffy—about 3-4 minutes.
  • Add eggs to the creamed mixture one at a time, incorporating fully before adding the next, then stir in vanilla extract.
  • In a separate bowl, whisk together all-purpose flour, baking soda, and salt until combined.
  • Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
