  • 2 tablespoons Sesame Oil Vegetable oil can be used if unavailable.
  • 1 cup Beef Stock Chicken or vegetable stock can be used.
  • ¼ cup Brown Sugar Honey or maple syrup can be alternatives.
  • 1 teaspoon Red Chili Flakes Adjust to taste or substitute with gochujang.

For the Sauce Thickener

  • 2 tablespoons Cornstarch
  • ¼ cup Water

Step-by-Step Instructions

  • In your slow cooker, combine diced onion, crushed garlic, minced ginger, rice wine vinegar, sesame oil, soy sauce, beef stock, brown sugar, and red chili flakes. Stir well to meld these flavors together.
  • Add bite-sized pieces of chuck beef to the slow cooker, ensuring each piece is well-coated in the sauce mixture.
  • Cover the slow cooker with its lid and set it to cook on low for 8 hours.
  • After 8 hours, mix cornstarch with water in a separate bowl to create a slurry and stir into the sauce.
  • Switch the heat setting to high and cook for an additional 30 minutes to thicken the sauce.
  • Serve the Slow Cooker Korean Beef garnished with toasted sesame seeds and sliced green onions.

Notes

For best results, ensure each piece of beef is generously coated in the sauce before cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
