Ingredients
  

For the Chicken

  • 4 pieces Boneless, skinless chicken breasts
  • ½ cup Teriyaki sauce

For the Vegetables

  • 1 cup Pineapple, chopped
  • 1 medium Red bell pepper, sliced
  • 1 medium Yellow bell pepper, sliced
  • 1 small Red onion, sliced
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • to taste Salt
  • to taste Pepper

For the Sauce

  • ¼ cup Soy sauce
  • 2 tablespoons Honey
  • 1 tablespoon Rice vinegar

For Garnishing

  • 1 tablespoon Sesame seeds
  • 2 scallions Green onions, sliced

For Serving

  • 4 cups Cooked rice optional

Cooking Steps

  • Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper or lightly oil it.
  • In a mixing bowl, combine the pineapple, red and yellow bell peppers, and red onion. Drizzle with olive oil, sprinkle with garlic powder, salt, and pepper, then toss to coat.
  • Arrange the vegetable mixture on one half of the baking sheet and place the chicken breasts on the other half.
  • In a small bowl, whisk together teriyaki sauce, soy sauce, honey, and rice vinegar. Pour this mixture over the chicken and vegetables.
  • Roast in the oven for 25-30 minutes until the chicken is cooked through (internal temperature of 165°F) and vegetables are tender.
  • Let the dish rest for a few minutes, then sprinkle with sesame seeds and green onions before serving.
  • Serve over cooked rice, if desired, for a delightful meal.
