Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and dry the sweet potatoes, then drizzle each with olive oil and rub it over the skins.
  • Place the sweet potatoes on a baking sheet and bake for 45-60 minutes until tender.
  • Once cool, slice each potato in half and scoop out most of the flesh into a mixing bowl.
  • Add butter, sour cream, milk, salt, pepper, cinnamon, and nutmeg to the sweet potato flesh and mash until smooth.
  • Stir in cheddar cheese and green onions; fold in bacon if using.
  • Spoon the mixture back into the sweet potato skins, mounding the filling.
  • Return to the oven and bake for another 15-20 minutes until heated through.
  • Let cool for a few minutes before serving.

Notes

For extra creaminess, use room temperature butter and full-fat sour cream. Customize flavors with your favorite spices or herbs.
