  • ¼ cup feta cheese optional, crumbled
  • 2 tablespoons fresh parsley or cilantro optional, chopped
  • 1 tablespoon lemon juice optional

  • Warm the tortillas: Use a dry skillet or microwave to warm the tortillas for easier rolling.
  • Season the hummus: Mix hummus, lemon juice, salt, and pepper in a bowl until smooth.
  • Spread the hummus: Lay a tortilla flat and spread ¼ cup of hummus evenly, leaving edges clear.
  • Layer the turkey: Place 2–3 slices of turkey over the hummus.
  • Add the vegetables and extras: Line with spinach, carrots, cucumber, red bell pepper, and optional feta and herbs.
  • Roll the tortilla tightly: Start rolling from the edge with the vegetables, tucking in the filling.
  • Repeat for remaining tortillas: Assemble the rest by repeating the steps for filling and rolling.
  • Slice into roll ups: Trim the ends and cut into 1–1.5 inch pieces if desired.
