  • Add 4 cups of chopped fresh spinach and stir until wilted (about 3-4 minutes).
  • Remove from heat and let cool slightly.
  • In a mixing bowl, combine 1 cup each of ricotta and crumbled feta cheese, and ½ cup of grated Parmesan cheese.
  • Add 2 large eggs and mix well until creamy.
  • Fold in the cooled spinach and onion mixture, seasoning with nutmeg, salt, pepper, and 1 tablespoon of dill.
  • Roll out the crust in a 9-inch pie dish, trimming edges as necessary.
  • Spoon the filling into the crust evenly.
