  • Season the flank steak with chili powder, cumin, smoked paprika, salt, and pepper. Rub olive oil over the steak.
  • Preheat your grill to medium-high heat (about 400°F). Cook steak for 6-8 minutes on each side.
  • Remove steak from heat and let it rest on a cutting board for 5 minutes.
  • Slice the steak thinly against the grain.
  • Whisk together lime juice, lime zest, garlic powder, and a pinch of salt for the dressing.
  • Layer cooked quinoa or rice in serving bowls.
  • Add cooked black beans and corn over the quinoa or rice.
  • Top with sliced steak, diced avocado, halved cherry tomatoes, and diced red onion.
