  • 2 tablespoons cornstarch

Preparation Steps

  • Pat the beef roast dry with paper towels, season with salt and pepper.
  • Heat olive oil in a large sauté pan and sear the seasoned roast for 4–5 minutes on each side.
  • Sauté onion in the pan, then add garlic, tomato paste, brown sugar, and spices, cooking for another minute.
  • Deglaze the pan with beef stock and transfer the mixture into the slow cooker.
  • Add carrots and potatoes around the roast, pour in remaining stock, and add herbs and bay leaves.
  • Cover and cook on low for 8 hours or high for 4 hours.
  • Strain cooking liquid for gravy, simmer it, and create a thickening slurry with cornstarch and water.
  • Whisk the slurry into the simmering cooking liquid until thickened, adjusting seasoning as needed.
  • Slice or shred the roast, serve with veggies, gravy, and garnish with parsley.

Notes
