Step-by-Step Instructions

  • Toss the cubed beef in a bowl with all-purpose flour, salt, and pepper until evenly coated. Set aside.
  • In a Dutch oven or slow cooker, heat over medium-high heat and add the chopped bacon. Cook until crispy, about 5 minutes.
  • Remove the bacon with a slotted spoon, leaving the drippings in the pot. Brown the beef cubes in the drippings for about 6-8 minutes.
  • Sauté the pearl onions, minced garlic, and sliced carrots in the same pot for about 4-5 minutes until they start to soften.
  • Stir in the tomato paste and cook for a minute, then pour in the red wine, scraping the bottom of the pot to deglaze.
  • Return the browned beef and bacon to the pot, then add beef broth, Worcestershire sauce, thyme, bay leaves, and mushrooms.
  • Bring to a gentle simmer, cover, and let it slow cook for 3 to 4 hours until the beef is fork-tender.
