Ingredients
  

For the Chicken

  • 1 pound boneless, skinless chicken breast
  • 1 tablespoon sesame oil for marinade
  • 1 tablespoon soy sauce for marinade
  • 1 tablespoon honey for marinade

For the Salad

  • 15 oz chickpeas drained and rinsed
  • 1 cup cherry tomatoes halved
  • 4 cups mixed salad greens
  • 1 medium cucumber thinly sliced
  • 1 medium red onion thinly sliced

For the Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger grated
  • 1 clove garlic minced
  • 2 tablespoons toasted sesame seeds for topping

Cooking Instructions

  • Preheat your grill or grill pan over medium-high heat, aiming for about 400°F (204°C).
  • In a small mixing bowl, whisk together sesame oil, soy sauce, honey, salt, and pepper for the marinade.
  • Brush the marinade over the chicken and let it marinate for at least 10 minutes.
  • Grill the chicken for 6-7 minutes on each side until fully cooked and internal temperature reaches 165°F (74°C).
  • Let the chicken rest for 5 minutes and then slice it into strips.
  • In a large salad bowl, combine chickpeas, cherry tomatoes, salad greens, cucumber, and red onion. Toss gently.
  • Whisk together olive oil, rice vinegar, ginger, garlic, and a pinch of salt for the dressing.
  • Pour the dressing over the salad mixture and gently toss until well coated.
  • Top the salad with sliced grilled chicken and sprinkle with toasted sesame seeds before serving.
