For the Beef

  • 1 pound beef (sirloin or flank steak) thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • to taste salt
  • to taste black pepper freshly cracked

For the Soup Base

  • 4 cups chicken stock or homemade bone broth
  • 2 tablespoons peanut butter

For the Noodles and Garnish

  • 8 ounces rice noodles
  • 1 cup bean sprouts fresh
  • ½ cup fresh cilantro leaves
  • 1 small diced red chili optional
  • 1 tablespoon lime juice

  • Marinate the Beef: Combine soy sauce, sesame oil, minced garlic, ground cumin, ground coriander, salt, and pepper with sliced beef. Let marinate for at least 30 minutes.
  • Prepare the Broth: In a pot, add chicken stock and heat until simmering. Mix in peanut butter and simmer for about 10 minutes.
  • Cook the Noodles: In a separate pot, boil water and cook rice noodles until al dente, about 5 minutes. Drain and set aside.
  • Sear the Beef: In a skillet, heat oil over high heat. Stir-fry marinated beef until browned and cooked through, about 2-3 minutes.
  • Combine the Noodles and Broth: Add seared beef and cooked noodles to the broth. Simmer together for another 2-3 minutes.
  • Serve and Garnish: Ladle soup into bowls and top with bean sprouts, cilantro, diced chili, and lime juice. Enjoy!

Notes

Marinate the beef ahead of time for optimal flavor. Adjust seasonings to your taste, and feel free to customize with your favorite vegetables or toppings.
