Ingredients
  

For the Salmon Balls

  • 1 lb Fresh salmon skinless and boneless
  • 1 cup Breadcrumbs panko preferred
  • 2 stalks Green onions finely chopped
  • ¼ cup Fresh parsley chopped
  • 2 cloves Garlic minced
  • 1 large Large egg beaten
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Lemon zest
  • to taste Salt
  • to taste Pepper
  • 2 tablespoon Olive oil for frying

For the Creamy Avocado Sauce

  • 1 ripe Avocado
  • ½ cup Plain Greek yogurt
  • 1 tablespoon Lime juice
  • ¼ cup Fresh cilantro chopped
  • to taste Salt
  • to taste Pepper
  • as needed tablespoon Water to thin the sauce

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) or heat a large skillet over medium heat.
  • Dice the salmon or pulse in a food processor until coarse.
  • In a bowl, combine salmon, breadcrumbs, green onions, parsley, garlic, egg, mustard, lemon zest, salt, and pepper. Mix well.
  • Shape into golf ball-sized spheres and arrange on a parchment-lined baking sheet or set aside for frying.
  • For stovetop, heat olive oil and cook salmon balls for 3-4 minutes on each side until golden brown.
  • For baking, place in the oven and bake for 15-20 minutes until firm and lightly browned.
  • Blend avocado, yogurt, lime juice, and cilantro until smooth for the sauce.
  • Season the sauce with salt and pepper, adjusting thickness with water as needed.
  • Let salmon balls rest for a few minutes before serving with the creamy avocado sauce.

Notes

Use fresh salmon for best results. Adjust seasonings and sauce consistency to taste.
