For the Soup

  • 1 medium eggplant cut into cubes
  • 1 medium zucchini diced
  • 1 medium bell pepper chopped, red or yellow
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 2 cups tomatoes diced, fresh or canned
  • 1 cup vegetable broth
  • 1 cup water

For Seasoning

  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 0.5 teaspoon crushed red pepper flakes optional
  • 2 tablespoons olive oil for sautéing
  • to taste salt
  • to taste black pepper

For Garnish

  • 0.25 cup fresh basil leaves chopped

Steps

  • In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering. Add the diced onion and sauté for approximately 5 minutes until they turn translucent and fragrant, stirring occasionally.
  • Stir in 4 minced garlic cloves and cook for an additional minute until aromatic. Be careful not to burn the garlic.
  • Add the chopped bell pepper and sauté for 3–4 minutes until softened.
  • Add 1 medium eggplant cut into cubes and cook for about 5 minutes, stirring occasionally.
  • Incorporate the diced zucchini and cook for an additional 3 minutes until tender.
  • Stir in the diced tomatoes, 1 cup of vegetable broth, and 1 cup of water. Mix well to combine.
  • Sprinkle in 1 teaspoon of dried thyme, 1 teaspoon of dried basil, and optionally ½ teaspoon of crushed red pepper flakes. Season to taste with salt and black pepper.
  • Bring the soup to a gentle boil, then reduce the heat to low and cover. Let it simmer for 30–35 minutes, stirring occasionally.
  • Taste the soup and adjust the seasonings as needed. Blend if a smoother texture is preferred.
  • Ladle into bowls and garnish with ¼ cup of freshly chopped basil leaves on top.

Notes

Prep all vegetables beforehand to ensure a smooth cooking process. Use high-quality broth for best flavor.
