Step-by-Step Instructions

  • In a large pot, combine chicken broth, halved onion, ginger slices, star anise, and a cinnamon stick. Bring to a boil for 5-7 minutes.
  • Once boiling, reduce heat to low and simmer for 15-20 minutes. Stir in fish sauce, soy sauce, and sugar to taste.
  • Cook rice noodles according to package instructions for 4-5 minutes. Drain and rinse under cold water.
  • Shred rotisserie chicken into bite-sized pieces, removing skin and bones.
  • Assemble bowls with cooked noodles, topped with shredded chicken.
  • Strain broth and ladle over noodles and chicken. Serve hot.
  • Garnish with fresh herbs, lime wedges, jalapeños, and bean sprouts.
  • Serve with hoisin and sriracha sauces on the side.
