For the Squash

  • 1 medium Butternut squash peeled and cubed
  • 1 tablespoon Olive oil for coating the squash

For the Filling

  • 1 pound Ground turkey lean protein
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Ground cumin for spice
  • 1 teaspoon Smoked paprika for flavor
  • 1 teaspoon Dried thyme for herbaceous note
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

For the Greens and Toppings

  • 2 cups Fresh spinach roughly chopped
  • 1 cup Shredded cheese cheddar or your choice
  • 2 tablespoons Fresh parsley chopped, for garnish

Step‑by‑Step Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Toss the peeled and cubed butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread on the baking sheet.
  • Roast the squash for about 25-30 minutes, flipping halfway through until golden-brown and tender.
  • In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add diced onion and sauté until translucent.
  • Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  • Add ground turkey to the skillet, breaking it up as it cooks for about 5-7 minutes until no longer pink.
  • Stir in ground cumin, smoked paprika, dried thyme, salt, and pepper. Cook for an additional 2-3 minutes.
  • Add roughly chopped spinach and cook for about 2 minutes until wilted.
  • Combine roasted squash with the turkey and spinach in the skillet, tossing gently.
  • Sprinkle shredded cheese over the mixture and cover with a lid for about 1 minute until the cheese melts.
  • Serve garnished with chopped parsley.

Notes

Store leftovers in an airtight container for up to 3 days. Can be frozen for up to 3 months.
