Step-by-Step Instructions

  • In a large mixing bowl, whisk together 4 eggs, 1 cup of milk, ½ cup of canned pumpkin puree, ¼ cup sugar, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, ¼ teaspoon ground ginger, and a pinch of salt until smooth.
  • Add the cubed brioche or challah bread to the pumpkin mixture, gently folding to coat. Let soak for 10-15 minutes.
  • Heat a skillet over medium heat and melt 1 tablespoon of butter, swirling to coat the skillet.
  • Add half of the soaked bread cubes to the skillet in a single layer and cook for 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes.
  • Transfer cooked bites to a plate, cover with foil, add remaining butter, and repeat cooking process with remaining cubes.
