  • 2 pounds boneless, skinless chicken thighs

For the Base

  • 2 tablespoons olive oil for sautéing
  • 1 large onion finely chopped
  • 3 cloves garlic minced

For the Spices

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon cayenne pepper optional
  • 1 teaspoon turmeric

For the Stew

  • 14 oz canned diced tomatoes undrained
  • 2 cups chicken broth
  • 1 cup cooked chickpeas
  • ½ cup dried apricots chopped
  • ¼ cup green olives sliced

Step-by-Step Instructions

  • In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add 1 large finely chopped onion and sauté for about 5 minutes until translucent.
  • Stir in 3 cloves of minced garlic along with 1 teaspoon each of ground cumin and coriander, ½ teaspoon each of ground ginger and cinnamon, and if you like, ¼ teaspoon of cayenne pepper and 1 teaspoon of turmeric. Cook for 1-2 minutes until fragrant.
  • Increase heat to medium-high, add 2 pounds of chicken thighs seasoned with salt and pepper. Brown for 4-5 minutes on each side.
  • Pour in a 14 oz can of diced tomatoes, followed by 2 cups of chicken broth, 1 cup of chickpeas, and ½ cup of chopped dried apricots. Stir together and bring to a boil.
  • Reduce heat to low, cover, and simmer for 30-40 minutes, stirring occasionally until the chicken is tender.
  • Uncover and fold in ¼ cup of sliced green olives. Adjust seasoning with salt and pepper as necessary.
  • Serve over cooked couscous or rice, garnished with freshly chopped cilantro or parsley.

Notes

For best flavors, use fresh spices and adjust seasoning to taste while cooking. Allow the stew to simmer gently to develop flavors.
