  • ¼ cup Kalamata olives sliced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon juice
  • ½ cup feta cheese crumbled

Step-by-Step Instructions

  • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for about 3-5 minutes until translucent.
  • Stir in the minced garlic and sauté for another minute until fragrant.
  • Add the ground beef, breaking it up. Cook for 6-8 minutes until browned, draining excess fat if necessary.
  • Mix in the sliced red bell pepper and zucchini, cooking for about 5 minutes until softened.
  • Stir in the halved cherry tomatoes, dried oregano, ground cumin, paprika, and season with salt and black pepper. Cook for 3-4 minutes.
  • Add the sliced Kalamata olives and chopped parsley, stirring gently to combine for 2 minutes.
  • Remove from heat, stir in the lemon juice, and sprinkle with crumbled feta cheese.
  • Serve hot over rice, quinoa, or couscous.
