Step-by-Step Instructions for Jambalaya

  • In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Once hot, add 1 chopped onion, 1 chopped bell pepper, 2 chopped celery stalks, and 2 minced cloves of garlic. Sauté for about 5 minutes until the vegetables are softened.
  • Add 1 pound of diced chicken and 1 pound of sliced smoked sausage to the pot. Cook for approximately 6-8 minutes, stirring frequently, until the chicken is browned.
  • Stir in 2 cups of long-grain rice, 2 teaspoons of Cajun seasoning, 1 teaspoon of dried thyme, and salt and pepper to taste. Mix thoroughly for about 2 minutes.
  • Pour in 4 cups of chicken broth and bring the mixture to a boil. Cover and simmer for about 20 minutes.
  • After 20 minutes, stir in 1 pound of peeled shrimp. Cover and cook for an additional 5 minutes until the shrimp turn pink and opaque.
