For the Bake

  • 2 large sweet potatoes for a creamy texture
  • 1 pound ground turkey lean and protein-packed
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 bell pepper any color, diced
  • 1 can black beans rinsed and drained
  • 1 can diced tomatoes with juice
  • 1 cup corn frozen or canned

For the Spices

  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon paprika for smoky flavor
  • 1 teaspoon cumin for warm earthiness
  • 1 teaspoon chili powder for a kick
  • salt to taste
  • pepper to taste

For the Topping (optional)

  • 1 cup cheddar cheese shredded
  • 1 tablespoon fresh cilantro for garnish

Instructions
 

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large pot, add salted water and bring it to a boil. Add cubed sweet potatoes and cook for 10–15 minutes until tender. Drain and set aside.
  • Heat a large skillet over medium heat, add olive oil, and sauté diced onion for 3–4 minutes until translucent.
  • Add minced garlic and diced bell pepper, cooking for another 2–3 minutes until softened.
  • Add ground turkey to the skillet, breaking it apart. Cook for 5–7 minutes until browned.
  • Stir in paprika, cumin, chili powder, salt, and pepper, mixing well to coat the turkey.
  • Add black beans, diced tomatoes, and corn to the skillet. Mix well and let simmer for 5 minutes.
  • In a baking dish, layer the cooked sweet potatoes evenly at the bottom, then add the turkey mixture on top.
  • If desired, sprinkle shredded cheddar cheese over the top.
  • Cover with aluminum foil and bake for 25 minutes, then remove foil and bake an additional 10–15 minutes until cheese is bubbly.
  • Let it rest for a few minutes, then garnish with fresh cilantro before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the microwave or oven to enjoy again.
