For Grilling

Preparation Steps

  • In a large resealable bag, mix together the light brown sugar, ketchup, canned pineapple juice, soy sauce, Worcestershire sauce, apple cider vinegar, minced ginger, minced garlic, smoked paprika, and black pepper.
  • Remove half a cup of the marinade for later, then add the boneless chicken thighs to the bag. Seal tightly and toss to coat. Refrigerate for at least 4-6 hours or overnight.
  • Preheat the grill to medium-high heat (around 400°F-450°F). Brush grill grates with vegetable oil.
  • Place the marinated chicken directly on the grill. Cook for 6 minutes, then flip. After another 3 minutes, baste with reserved marinade and flip once more, cooking for an additional 1-2 minutes.
  • Remove the chicken from the grill and let rest for about 10 minutes.
  • Grill fresh pineapple slices directly over medium heat for about 3-4 minutes on each side.
  • Plate the Hawaiian Huli Huli Chicken alongside the grilled pineapple and garnish with sliced green onions.

Notes

For the best flavor, marinate your chicken overnight. Always reserve some marinade for safe basting. Adjust cooking time if using different cuts of chicken.
