Ingredients
  

For the Chicken

  • 4 pieces Boneless Skinless Chicken Breasts Substitute with turkey or tofu if desired.
  • 3 cloves Fresh Garlic Minced for extra flavor.
  • ¼ cup Low-Sodium Soy Sauce Gluten-free option available.
  • 2 tablespoons Balsamic Vinegar Apple cider vinegar can be used as a substitute.
  • 2 tablespoons Brown Sugar Maple syrup can be used instead.

For the Onions

  • 2 large Large Onions Vidalia onions are recommended.
  • 1 tablespoon Olive Oil For frying and caramelizing.

Marinating and Cooking

  • In a medium bowl, combine low-sodium soy sauce, balsamic vinegar, minced garlic, and brown sugar to create a flavorful marinade. Add the boneless skinless chicken breasts, cover with plastic wrap and marinate for at least 30 minutes in the refrigerator.
  • Heat a tablespoon of olive oil in a large skillet over medium heat. Add the sliced large onions and cook for about 20 minutes, stirring occasionally, until caramelized.
  • Preheat your grill to a medium-high heat (375°F). Remove the chicken from marinade and grill for 6-7 minutes per side, until internal temperature reaches 165°F.
  • Top each piece of grilled chicken with the caramelized onions and let it rest for a couple of minutes.
  • Serve the chicken on a platter, drizzling any remaining glaze from the skillet on top.

Notes

For best results, use a meat thermometer to avoid overcooking. Experiment with spices for a unique touch.
