  • 2 stalks Celery Roughly chopped
  • 2 whole Carrots Roughly chopped

Step‑by‑Step Instructions

  • Prepare the turkey by allowing it to reach room temperature for 1 hour and removing giblets.
  • Preheat your oven to 325°F (160°C).
  • Pat turkey dry, then season generously with kosher salt and black pepper.
  • Stuff the turkey cavity with onion, lemon, rosemary, thyme, and sage.
  • Mix softened butter, minced garlic, salt, and pepper to create herb butter.
  • Rub one-third of the herb butter under the turkey skin.
  • Coat the outside of the turkey with remaining herb butter.
  • Prepare the roasting pan with the quartered onion, celery, and carrots.
  • Position the turkey breast side up in the roasting pan.
  • Roast for about 15 minutes per pound, until internal temperature reaches 158°-160°F.
  • Tent with foil if browning too quickly.
  • Rest the turkey covered loosely with foil for 30 minutes before carving.
  • Carve and serve the turkey, saving pan juices for gravy.
