For the Carrots

  • 4 large Carrots peeled and cut into sticks
  • 1 tablespoon Honey for caramelizing the carrots
  • 1 tablespoon Balsamic vinegar for tangy depth

Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small mixing bowl, combine three tablespoons of olive oil, four minced garlic cloves, one tablespoon each of chopped rosemary and thyme, and one teaspoon of paprika. Season with salt and pepper, then stir until well blended.
  • Place four boneless, skinless chicken breasts in a resealable plastic bag. Pour the marinade over the chicken, making sure it's evenly coated. Seal the bag or cover the dish, then refrigerate for at least 30 minutes, up to two hours.
  • Wash and peel four large carrots, cutting them into sticks. In another bowl, mix the carrots with one tablespoon of honey and one tablespoon of balsamic vinegar.
  • After marinating, remove the chicken from the fridge and place it in a baking dish, surrounding it with the sweetened carrot sticks.
  • Drizzle any leftover marinade over both the chicken and carrots.
  • Place the baking dish in your preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the carrots are tender.
  • Once cooked, remove from the oven and let the chicken rest for about 5 minutes.
  • Slice the chicken breasts and serve them on plates with the roasted carrots.
  • Sprinkle freshly chopped parsley over the dish before serving.

Notes

For deeper flavor, marinate the chicken for at least two hours. Cut carrots to similar sizes for even cooking. Use a meat thermometer to ensure chicken is cooked through and let it rest before slicing.
